Dandelion jelly

3 cups of fresh dandelion petals (you'll need to gather about 6 cups of clean fully open whole flowers)

3 cups of boiling water

1/2 cup of lemon or lime juice

1 cup of honey

2 teaspoons of natural agar powder (natural gelatine)

 

Using kitchen scissors cut off the yellow petals and discards the green flower base.

Poor boiling water over the petals and let sit for about 6 hours to get a strong infusion.

Strain and discard the petals.

Put aside a cup of the infusion and mix it with agar powder.

Add lemon juice and honey to the rest of the infusion and bring it to boil.

Stir in the cup of dissolved agar powder and cook for another couple of minutes.

 

Pour into clean sterilised jars, clean each rim and place lid and ring on each. Screw ring on tightly and invert jars on a towel for about 10 minutes. Jars should seal within 10 minutes as they cool. If they do not seal, you can place them in a hot water bath for 10 minutes or place in the refrigerator.

Sealed jars will last about one year in a cool, dark place. Open jelly jars should be kept in the refrigerator and could last for about a month.
