Wilted Spinich Salad

Kale & Spinich, wilted with a hot simple dressing.






3 tbls of sugar

1/2 cup White Balsamic Vinegar

1/2 cup Red Wine Vinegar (you can substitue any vinegar for your favorite)

2 tbls of Sesame Oil

4 strips of bacon (Turkey bacon for a healthier alternative)

Dash of garlic powder or a single clove of chopped or pressed garlic


Use a Medium Sized Bowl

Fill the Bowl with Spinich & Kale

You can substitute or add your own choice of Leafy green lettuce.


To make your dressing you can use bacon or not.

For this specific recipe I used 4 strips of Turkey Bacon


Cut up the bacon in to chunks and fry in a small pan at medium to medium high heat. Fry till it's almost crispy. poor out any excess bacon fat grease and add 2 Tbls of Sesame oil, turn the heat down to medium low and mix the oil with the bacon. Next add in 4-5 chopped green onion and sautee the onion. Next take 1 Tbls of sugar and mix with the bacon and onion and sir till the sugar melts down and the onions become carmalized. You can add more sugar if necessary if 1 tbls is not enough to carmelize.


Once carmelized, turn down the heat to low and add in 1/2 cup of red wine vinegar and 1/2 cup White Balsamic Vinegar and stir the mixture together. Make sure your pan is not too hot or you may have a nice flash fire on your stove but do not shut off the heat.. At this time, add a dash of garlic powder (if you like fresh garlic you can add that in when you add the green onion) and 2 tbls (or to taste) of sugar and stir till the sugar is dissolved. Turn off the heat.


While the dressing is still warm, poor the contents on the fresh Spinch & Kale.

Take either 2 wooden spoons or a pair of salad tongs an toss the mixture till the Greens are completely coated and have soaked up most of the dressing. The heat of the warm dressing will wilt the greens so don't worry, this is supposed to happen! If you like your salad a little more crisp, add half of the dressing.


The salad will be sweet and tangy with a bit of salty smokey flavor thanks to the bacon. A medium bowl should serve 4 people, Enjoy!
