Ice Cream: Black Sticky Rice & Mango
The black rice & coconutty flavor is YUMMY, however, I think this ice cream could use extra sugar. Not quite sweet enough. I later found out that palm sugar is less sweet than regular sugar, so I should have used more of it, or added regular sugar.
I thought that blending in the rice could replace the need for corn starch/tapioca starch but I was wrong. The ice cream texture is a little icy and when I make this again, I will strain out all the rice before churning.
I added extra sugar, I strained out the rice before churning. We lose some of the black rice flavor in Version 1... but the texture is now really smooth and creamy. Maybe I should have steeped the rice for longer than 30 minutes.
