Ice Cream: Lemon Lavender with Caramelized White Chocolate Freckles

I combined several recipes & techniques from Jeni's book.

 

This is like nothing I have ever tasted. Wow.

 

I am not sure if this is the correct consistency for the caramelized white chocolate ...it's quite goopy and grainy in the bowl ... (And I know I am not alone on this one) but when the caramel blobs are mixed into the ice cream, they turn into pieces of "caramel brittle". YUM.
