Ice Cream: Celery with Rum-Soaked Raisins

This is a recipe from "Jeni's Splendid Ice Creams At Home", my new favorite book about making artisanal ice creams.


I had no idea what this was going to taste like. Most flavors that I make I do so out of curiosity... to know what something tastes like.


I don't even really like the taste of celery, but WOW. I like this very much in an ice cream. With sweet rum raisins.


The original recipe calls for chopped candied ginger but I didn't have any (and I think I might be allergic to this) so I added some ginger syrup instead... not that you can really taste it.


In this photo, the ice cream is freshly-churned which is why it looks a bit gooey.
