Cardamom ice cream with rhubarb compote

Christa requested this flavor and she gave this a thumbs up.


I'm not a huge fan of Cardamom (except in garam masala or mixed with other spices). This here is cardamom-infused milk, sugar & creme fraiche... so the cardamom stands on its own.


The rhubarb compote (rhubarb cooked with brown sugar, and vanilla extract) which I folded into the ice cream WAS delicious but turned icy after a couple of hours in the freezer... not what I expected :(
