Peter Reinhart's Bagels
I made Bagels from Peter Reinhart's The Bread Baker's Apprentice.

Recipes for Bagels and for Pizza were my strongest impetus for buying this book (and other cookbooks). I'd made bagels from Betty Crocker's Breads and although they were nice, I wasn't too impressed.

I studied this recipe for days or even weeks when I got this book. I intended to make it first but I decided to try something with a lot less steps and hopefully less complicated, ie, the Marble Rye and then expand my horizons.
