Hong Kong's bilingual Octopus cards?

Almost everything in Hong Kong is is both English and Chinese: street names, train timetables, signs on shops, the list goes on.

The card on top was purchased by my Cantonese speaking aunty, the one below was purchased by English speaking me at a MTR station. The top card displays the card balance in Chinese at ticket barriers and on receipts, while the lower card displays everything in English. Presumably the display language of the card is set at the point of issue?
