Chef/owners Sarah Stegner and George Bumbaris have been working closely, for years, with TV’s famed newsman and producer turned cattle rancher, Bill Kurtis, to offer Chicagoans Kurtis’s celebrated Tallgrass Beef. Tallgrass Beef cattle feed naturally on native prairie grasses, producing beef that is one hundred percent organic, hormone-free and antibiotic-free. It’s delicious and healthy. Prairie Grass Cafe’s signature burger is the #1 Sirloin Burger ($15), so named because Chicago Magazine named it the best burger in Chicago. It’s made from a half pound of freshly ground Tallgrass Beef and served bunless, topped with a flavorful bleu cheese crust and accompanied by grilled tomato slices and potato wedges. If you prefer your burger with a bun, simply ask for it--it’s baked in-house and delicious.
