Matcha and Red Bean Cake
My favourite dessert at Michi because it combines two of my favourite Japanese dessert flavours. It's seemingly so simple, but the different way the cake layers are put together makes it more interesting. It also helps that every single element tastes good and together, they are more than the sum of their parts.
The genoise is exceptionally soft and fluffy with a milder green tea flavour. The cream sandwiching the layers together, interspersed with red bean paste has a slightly stronger green tea taste and looks exceptionally pretty in its cross-hatch form on top.
