6/23/10 Curry Time
I used to make Thai curries at least once a week--they're the perfect summer meal, since so they're so easy and so beautifully make use of delicious summer produce. But I guess I have become obsessed with other dishes in the past few years and haven't made many curries at all. Last week I remembered that they existed, and this week I am really excited about reintroducing them into my rotation. These are actually Indian eggplants, but I don't discriminate--they're so good in Thai curry.
