Meatless Mousaka made with Love!... see the photo bellow.
As you know I love to cook, I made this Mousaka without meat,
4 layers of eggplant and potatoes with each layer separated with saute onions and mushrooms,
The béchamel topping has a very Greek twist to it, made with Feta Cheese and Kefalotiri,
Kefalotiri is used on all the pasta dishes just like Romano.
While peeling potatoes for the Mousaka I had some fun:-)
