1 packet of plain biscuits (crushed)
1 packet of coconut biscuits (crushed)
2 heaped cups of coconut
3 lemons - juice and zest
150gms of butter
1 tin of condensed milk
1 packet of mixed glace peel
Mix all ingredients well and press into greased tin. Bake at 180 degrees celcius for 10 mins or until golden then leave to cool. Once cool I iced with a lemony firm buttercream icing and sprinkled lots of coconut on top.
