Making chili oil, step 1: you will need roughly 6 tablespoons of huajiao (Sichuan pepper), about half a cup of chili flakes - I bought mine at a Turkish store, where it says something like Biber on the package-, some untoasted sesame seeds and a teaspoon of salt. Put all this in a heatproof container.


[update] You can also use Korean chilli flakes, they are very good, too!
