Homemade Corn Toasties

    Yum! In New England, they call these "Johnny Cakes. Some say that's a corruption of "Journey Cake" since they travel well or "Shawnee Cake" as the local Indians showed early colonists how to make them.

    Actually this is different from a Johnny Cake. It has a lot more ingredients like flour, vanilla & sugar (which isn't traditional in Johnny Cakes). Also it isn't fried like Johnny Cakes are its baked & then you toast it when you want to eat it. I don't think these would travel as well.

    I was guessing pancakes.

    I've made these and they are good.

    And another name for Johnnycakes is polenta.

    I still remember them as Corn Toasties as well. They came out very good. Just like I remember them.
