Delicious Stuffed Potatoes (again!)

Another nice, close-in shot of my dinner of tonight - stuffed potatoes!


The process is simple, really - if you want mashed potatoes one night, make it by boiling halved baby potatoes, run under cool water to cool them down a bit once they're nice and tender. Scoop out the innards, and mash them up for your meal that evening, reserving the potato shells and a little bit of the mashed potato for the next night to bind together whatever you want to stuff your potato shells with.


It might take a little bit longer to make your mashed potatoes the first night, but it certainly makes for a quick and easy meal the next night without any added fuss!
