landscape photography essential tool - graduated neutral density filter

why can't I just point and shoot the sunset like I'am taking my other photos? :-)

Because of dynamic range needed to record both sky/sun and ground is almost 14 light stops and your digital camera can record only 8 stops.

Graduated neutral density filters helps to stop down sky and with it camera sees "compressed" range at the same exposure.
