Peanut Butter Banana muffins

I made these for Justin's birthday because of how much he loves PB&B sandwiches. His family is visiting and they all loved them so I bet these will be a heavy rotation muffin.


1 1/2 cups whole wheat pastry flour

1/2 cup instant oats

1/2 cup honey

1/4 tsp. baking soda

1/4 tsp. baking powder

3 mashed overripe bananas

1/4 c. buttermilk

1/2 tsp. vanilla

1/2 cup chopped peanuts

1/2 cup natural peanut butter

1/4 tsp. cinnamon


makes 12 large muffins. I like to sprinkle cinnamon on the top and add a sliced banana dipped in buttermilk for decoration. I'd decorate with peanuts instead if you are not going to use the muffins in one day because the banana on top gets discolored. Also, these are a bit sweeter than I usually make so cut down on the honey if you don't want a sweet muffin.


bake for 20 min. at 375 degrees
