Raspberry Lemon Pancakes

They were good even if they were a made-up-on-the-spot recipe. But, the critical error I made was to not leave the raspberries in the batter whole. I tried them each way and it was way better biting into the big chunks of fruit. There are also chunks of ricotta cheese which you can't see, but trust me, they are in there--goes nicely with the lemon.
