I wanted to see if I could accelerate the dehydration portion of the aging process by placing the steak in a container full of salt for 3 days. The use of a previously frozen steak resulted in significant amounts of liquid draining out.

 

Start weight: 237.1 grams

End weight: 223.1 grams (steak)

Residual liquid: 11.0 grams

 

Total liquid loss due to evaporation: < 3.0 grams (1.3% of initial weight)
