    interesting.. it looks spicy! What is it? and is it vegan?

    It's actually a Peruvian (Huancaina is said of its origin of Huancayo, Peru). The plate pictured has elements that do not belong in the dish and missing some. The original Papa a la Huancaina is basically boiled potatoes on a bed of lettuce with a cheese sauce over them, with slices of boiled egg.

    This is a vegetarian (vegan) take on the traditional Huancayo dish that's popular in South America. The key element is the spicy peanut sauce, which was delicious!
