Ancient Romans used to eat these raw with some dried salted tuna (mojama in Spanish) and it is a nice flavor combination. We still eat them that way, specially in the Southeast coast of Spain, by the Mediterranean, Valencia, Almería, Murcia... These guys talk about mojama and habitas tiernas.
