Chicken Stock II

After I'm done cooking the chicken, I bone it, toss the skin and all parts back into the pot, throw in some garlic and carrots and onions and celery and a lemon, fill it with water, and simmer for 12 hours. The result? Wonderful stock. Here I'm taking out all the chunky stuff.
