Rainbow Cupcakes

I made these today to donate to Australia's Biggest Morning Tea tomorrow at my daughter's school.

 

They are vegan chocolate cupcakes with vanilla buttercream, and decorated with a rainbow sour fruit strap.

 

I was going to fill them with a caramel "pot of gold" filling, but I couldn't get my caramel firm enough so I scrapped that idea. They still taste great anyway!
