Mini Rustic Salted Chocolate & Caramel Tarts
Very loosely adapted from a food magazine, these are mini tarts that have the diameter of a standard cupcake. The chocolate crust is homemade, then filled with dulce de leche, then topped with dark chocolate ganache. A sprinkling of sea salt flakes scatters the top.
I call it "rustic" because I didn't even roll out the pastry crust - I tore chunks of the dough, smashed it between my hands and stuffed it into the bottom of a 12-hole cupcake pan. That's why the edges are very uneven and that's why I'm calling it "rustic". ;)
