Lamingtons

Walk into any bakery in Australia and you'll see lamingtons under the display case.

 

What are lamingtons? They are squares of day-old sponge cake that are dipped in a thin cocoa-powder based icing then rolled in shredded or desiccated coconut. Sometimes you can find them filled with cream or jam.

 

They are allegedly named after Lord Lamington and came into creation circa 1900 from a shortage of ingredients in the Queensland's Government House. via Wikipedia.

 

The lamingtons pictured here have been homemade by yours truly. Not the best lamingtons, but still nice with a cuppa. The best lamingtons I've eaten came from a bakery directly next to Pablo & Rusty's Espresso Bar in Epping.
