Chocolate Raspberry Cream Cake
This has been my dream cake for a while, and finally made it yesterday. I thought it up myself, basically inspired by an episode of Masterchef Australia (the black forest cake pressure test). Two layers of chocolate sponge cake (although overly dry, due to baker error), and a layer in between of high-quality, all-natural red raspberry jam and mascarpone cream with specks of Madagascan Bourbon vanilla bean. On top is a thick coating of smooth chocolate ganache dotted with fresh raspberries.
