      Made these tonight - really good!! But I'm new to cooking with wheat gluten and think I may have screwed up- are they still supposed to be really soft inside after cooking? I cooked them for quite a while but they were still kinda stringy inside.

      Hey there. My first time cooking with wheat gluten was in this recipe and I had no idea if they turned out right, but yes, they are going to be stringy. :) I've made this recipe more than once with the same results. According to Wikipedia, wheat gluten is "stringy" and "chewy."

      You should try the Potato and Kale Enchiladas from Veganomicon, they're pretty good too. I make them with Cheater Baked Beans :)

      I made these today using Vital Wheat Gluten for the very 1st time. Mine were not "stringy" I kneaded the entire ingredients as directed and cooked on top of stove. I loved them and ate w/side of the Dill Tahini sauce. yum!
