One of the things I love about Derby week is that we almost always get to celebrate my dad's birthday with him. And next year? He'll turn 70 on Derby day. Pretty awesome if you ask me.
We spent the day at the track at the Kentucky Oaks. I cashed a lot of tickets and came home $25 richer after buying drinks, food and paying the babysitter. WIN.
I slow roasted a side of salmon for dinner. We ate it with arugula from the garden and golden beets and potatoes. There was mint julep cake for dessert. It (the mint) didn't give me a headache, either. WIN.
