DUCK, mango, yogurt, pillow of lavender air

 

Our first "vapor" experience -- the servers first came around and placed an inflated muslinesque pillow in front of each of us, and then placed the duck dish on top, explaining that the lavender scent would surround us as the pillow gradually deflated. The duck was presented in several different forms, served with turnips cooked in red wine, yogurt, and mango puree.

 

Sue Wen: I like the smell of lavender, but otherwise this didn't really do anything for me; the duck, however, was very, very tasty. [My] favorite was a roll of slow-poached duck breast, so very amazingly tender and delicious. Mmmmm.

 

Kevin: I was the only who didn't really go for this and would have just preferred the duck by itself.

 

Matt: Clearly the pillow was merely amusing for me (anosmia), but it was some nicely executed duck.
