Salted Chocolate Dulce de Leche Tart

    I loved that lavender tart from last week and wanted to make something similar, but not the same, for a party tonight.

    This tart uses the same crust, but without the cardamom and lemon, and a halved recipe for the ganache (no lavender). Underneath the chocolate is a layer of dulce de leche, made using this recipe, my favorite. There's some chunky grey sea salt on top.

      I used a grocery store Ghirardelli baking bar chocolate for this one, out of laziness, and it was not anywhere near as good as Callebaut Bittersweet (baking) Bloc – 71% Cocoa I used for the first tart I made. The Callebaut made a really nice, firm, fudgy ganache and the Ghirardelli a soft one.

      The rest of the tart was freaking INSPIRED, y'all, and super easy to make! It was devoured at the party. I fed it to a bunch of (really) old people who were pretty damn excited about the salt on top.

      Yeah, and I'm thinking the caramel might be easier than the dulce de leche. Of course, if you already have some on hand....
