    I've asked people on Twitter and talked to the locals of Chicago and most praised about this restaurant highly - and I understand why.

      I wonder how many people appreciate the marrow bones .... growing up in Romania, we ate almost everything an animal had to offer ... here it seems such a niche market. Quite a shame, since I think that the "lesser" parts of an animal are so full of flavor ...

      I think the general American public is slowly starting to appreciate offal (the usually unwanted animal parts like an animal's kidneys, tendon, tripe, etc.) since there were a few cookbooks published about cooking them and more restaurants are putting them on the menu.

      wonderful presentation - we had a problem with BSE in the UK (due to feeding cattle with protein - a waste product from abbatoirs) so there is still a reluctance to tuck into marrow....

      I understand your hesitance eating with bovine, especially because of that bovine disease in the UK. Are there any more outbreaks there? I haven't heard too much over this side of the pond.

      No more outbreaks I'm glad to say. But it takes a long time for the public to forget. All animals now have a 'passport' and at abbatoirs all spinal fluid /marrow is collected and destroyed.

      I've never had bone marrow at a restaurant. The presentation looks wonderful!

      Really? I know of a few that does serve in NYC (e.g. Landmarc and Blue Ribbon).

      I've seen pictures, but I haven't been to the restaurants that serve it--not yet!
