Pasta with Vegan Tomato Sauce
These flat round pasta look like communion wafers. They're a bit of a splurge but the texture is chewy and excellent. But you can use any type of pasta. The tomato sauce was easy and quick to make:
chopped fresh tomatoes (use canned if there aren't any)
salt and pepper
chiffonade of basil
Get the olive oil hot and sizzle some chopped onions until they are just cooked. Add a teaspoon or so of tomato paste and caramelize the sugars by cooking it with the oil and onions. Season to taste. Add the garlic and continue to cook but don't let it get too brown or burned. Add the chopped tomatoes (I don't bother with the deseeding and peeling but knock yourself out if you're into that sort of thing) and cook down so the sauce thickens a bit. Add half the basil and save the rest for garnishing.
Throw the cooked pasta in the sauce, and add a bit of the pasta water if you need it, but it's not necessary. Serve with a little extra fresh basil, some cracked pepper, and drizzle of olive oil. If you are not vegan, feel free to add a bit of cream and/or cheese. I would have, had I had those things.
