"Potato Salad with Parsley & Chives"

 

Chopped unpeeled Yukon Gold potatoes mixed with fresh chives, peas, parsley, celery, light mayonnaise, sour cream, Parmesan, lemon juice, salt, and pepper.

 

While I don't like soupy potato salad, this was too dry for me and I think I might double the dressing recipe next time. Also, it needed a little garlic or red onion.
