...miso soup, homemade whole wheat toast with butter, homemade hummus, and lemon tuna salad.

Soup: boiling water added to a ball of white miso, a pinch of vegetable bouillon, a slice of ginger, and snipped scallions. Instant and delicious.

 

Bread: sourdough starter, whole white wheat flour, water, olive oil, and salt.

 

Hummus: chickpeas (pressure-cooked in water with olive oil, cumin, paprika, salt, garlic, and a bay leaf) blended with tahini, olive oil, garlic, lemon juice, and salt.

 

Salad: tuna tossed with celery, red onion, black olives, a hard boiled egg, chopped parsley, dried mint, paprika, salt, black pepper, olive oil, and fresh lemon juice.
