Peanut Butter and Chocolate Cupcakes

Peanut Butter and Chocolate... I know for many people just putting those words together makes you a little happy. Well, if that's the case, then these cupcakes would make you ecstatic.

 

These are peanut butter cupcakes with mini chocolate chips, topped with peanut butter and chocolate frosting swirled together. Now, wipe the drool off your keyboards... =)

 

To join in the fun over at the Sweet Treats group, I made Peanut Butter and Jelly cupcakes today ( www.flickr.com/groups/sweet_treats/discuss/72157616064540... ) But I've also been wanting to try a peanut butter and chocolate combo for some time, so I saved half of the peanut butter cupcakes for this variation. I added 1/4 cup of mini chocolate chips to the batter of the peanut butter cupcake recipe below. But since I was only doing half of the batter this way, if you are doing a whole batch, you would want to add at least 1/2 cup mini chocolate chips.

For the frosting I saved half of the peanut butter frosting (from the recipe below), and put it in a pastry bag side-by-side with Chocolate Cream Cheese frosting. Peanut Butter Frosting:

 

1/2 cup (1 stick) unsalted butter, at room temperature

1 cup smooth peanut butter

1 (8-ounce) package cream cheese, at room temperature

4 cups confectioners' sugar

1 tablespoon heavy cream (or milk)

 

Beat the butter and cream cheese with a hand or standing mixer on medium speed, until smooth. Add peanut butter and beat until well combined. Slowly add the confectioner's sugar and continue to mix until the frosting is smooth. Add in the cream and continue to mix until it reaches a good spreading consisting.
