      actually this stuff's really nice. normally a single pudding about 6-8" wide. basically suet dumplings wrapped around steak and kidney filling. it was a staple of english cooking a generation ago but i haven't had it for years. has to be home-made, it's not something that can be packaged for a supermarket with any quality.

      i suspect all beef suet is fairly alike so they had to work hard to differentiate themselves! actually i don't remember any other brand so it worked.

      the problem is that this makes the dumpling part look like fat. whereas it's like doughy bread. and very nice. google 'steak and kidney pudding' to see what it really looks like.

      Steak and kidney pudding was a staple in The Magic Pudding. These days suet comes in two varieties, still. The "good" stuff (for human consumption) and the other stuff (for bird feed).
