Quickie Strawberry Cookies
I made these from a strawberry cake mix, a stick of softened butter and an egg. Whip all that together with a mixer on low and drop by small spoonfuls onto an ungreased baking sheet (I lined mine with parchment paper) and bake at 350 for about 10 minutes, depending on the size of your cookie. Keep an eye on them because they burn easily and some of my pretty pink cookies turned to a salmon color while I was talking on the phone in the other room. Cool cookies on the baking pan for a few minutes and then transfer them to a rack to cool completely. I used canned strawberry frosting to make sandwich cookies.
You could use any flavor cake mix.
