I cheated with the lattice-ing, my skills suck :P I will have to make more pies to practice, I think :)

Your skills do not suck your food is always amazing! and you can never have to much pie

What a beautiful pie. Rhubarb unfortunately is not in season here. I've been dying to make a strawberry rhubarb cake as well as someone had informed me of a wonderful way to make a rhubarb granita :D Thanks for sharing and yet again another recipe of yours I'm dying to try out once our markets have some rhubarb!

PS, when I took my baking class, my professor did cheat herself on the lattice top. I was having previous issues of "weaving" everything without tearing or stretching the dough. She cut the strips with a pizza slicer then gently put the pan on top of the strips to measure length, left about 1/2 to 1" on each side of the remainder strips of dough, performed the weaving before assembling (on a table), and gently picked it up and moved it to the pie. Just a suggestion if you'd like to try it out, and if it's not descriptive enough, I'll see if I can get a picture to show you an example.

thanks for the advice! I'd definitely like to get the technique right eventually, they look so pretty. Hope you can find some rhubarb soon!
I would have liked to do a scalloped edge, but I only have a cutter for playdoh... which come to think of it, might work!

Yeah, I have not gotten down the full technique of a scalloped edge, but I would think a playdoh cutter would work for the strips :P

We only get fresh rhubarb at the end of Summer, or the beginning of Fall, so unfortunately at this time we don't have any. I'm waiting patiently though! :)
