    Recipe from Vegan Cupcakes Take Over the World. Topped with vegan buttercream (VCTOTW), chocolate shavings, and maraschino cherries.

    About 1/4 of a cup of Comstock cherry pie filling was finely chopped & added to the batter, as were some chocolate chips to give it more of a chocolate-covered-cherry flavor. 'Twas a huge success in the Frankenberry household, but only because the original VCTOTW recipe was so good!

      Thanks, everyone! These are a definite hit in this house.

      QuintanaRoo---the tip is one of those large ones--2D. It is a flower tip, but makes these nice, ice cream swirls. Another nice tip, which is an actual star tip, is the 1M. I used it for the Lemon Macadamia cupcakes.

      Mmm pretty...

      What sort of flour does VCTOTW use? I'm just wondering if they'd be easily adaptable recipes that I could try and make them gluten/wheat free...

      The flour recommendations in that book depend. Mostly the recipes use ordinary flour. There are a couple of recipes in there that are gluten free, and to make them, the recipes suggest using a combination of flours, such as chickpea, and 2 others that I can't think of offhand.
