"straight" cider (first pour)
Gets a decent, though not "full-on effervescent" sparkling carbonation from being on 10 (12?) PSI for the past week or so.
Recognizably a cider. Cold and carbonated, I get many of the same notes as earlier samples suggested -- red apple skin, some underripe apple flesh, and quite dry. I don't know cider tasting super-well yet, but I'd say I get some pleasant background tannins, but suspect it would benefit from a little more acidity.
