Made some cheese croquettes. Or actually, as they're round, they're called bitterballen not croquettes.
Made with a mix of Stolwijker Cheese and some fenegreek goat's cheese. Not bad at all!
I used the same recipe as for my dutch shrimp croquettes. only substituted the 500 grams of brown shrimp with 350 grams of Stolwijker cheese and 150 grams of Fenegreek goat's chees. Grated, of course.
(or actually, I only had 350 grams of brown shrimp, so I decided to not recalculate the recipe, I just made the whole batch of roux, then divide the roux and added shrimp in the one and chees in the other.)
