Burdock Root or Gobo

Japanese burdock root (gobo). We actually grow these in the Netherlands too, calling it kliswortel. But hardly anybody still eats it. When fresh and young it has a nice, sweet, herby taste and a great crunch.

In Japan it's used in stews and soups. In Korea I think it's also braised.
