Cajun Spices

Dry-roast in a heavy skillet over moderate heat until slightly darker and fragrant:

1 t black peppercorns

1 t cumin seeds

1 t yellow mustard seeds

 

Grind in your old coffee grinder or mortar & pestle, then add

2 t paprika

1 t cayenne pepper

1 t dried oregano

2 t dried thyme

1 t salt

 

Grind some more until you have a nice powder/mixture. Then before you want to use it, add:

2 shallots, chopped

2 cloves of garlic, chopped

 

I grinded this into a paste. (see next photo)
