I actually didn't expect to like Okonomiyaki, but I did! I'm sure I'll make it again, with better/more ingredients. The base is a simple pancake batter:
100 gr flour (I used light bapao flour)
140 ml dashi
1/4 t baking powder
1 T grated mountain yam
In this batter you mix almost any kind of chopped vegetable you have available, shrimp, meat, bits of tempura batterbits or crisps and an egg.
Gently panfry this mixture. Add bacon on top before you flip it.
When cooked (10-20 minutes?) add Okonomiyaki sauce, spring onion and japanese mayonaise.
