Baked Potato

    Baked for 1 hour at 200°C. No wrapping, but I didn't like it that much. Next time I will wrap them again in alu-foil. Sauce made of garlic, mayo, creme fraiche, fresh thym, shallot, pepper, salt, lemonjuice.

      You might like to try rubbing the outside with olive oil and salting with olive oil before baking. Be sure to prick the skin in a few places before baking, too.

      That will give you a nice crisp and tasy exterior, especially if you raise the temperature a little, at least 220°C.

      Wrapping a baked potato makes it a steamed potato, which I personally don't like so much.

      You also might like fresh farmer's cheese, too (cottage cheese in the US). Flavor has some characteristics in common with creme fraiche, but also has it's own character.

      I was raised in Idaho, USA, which is justifiably well known for its potatoes. I don't know if that qualifies me in any way, but I do love potatoes.
