Asian Mushroom Risotto
Read my blog of the recipe for this lovely risotto. (this time with dried shiitake and porcini, fresh king oyster mushrooms, shimeji and enoki. And oaked chardonnay instead of sake)
The grilled shiitake's were fresh ones, cooked for a minute in a mixture of :
1,5 dl sake
2 T teriyakisauce
2 T cane sugar
1 T sesameoil
1/2 clove of garlic, grated
Then marinated for an hour, grilled under the grill for about 6 minutes.
I think dried shiitakes work better.
