Potato Salad

    Newer Older

    Just boil the new potatoes in the skin (20 minutes or so)
    Drain, cut in half or quarters.
    Add red onion, basil and while it's still hot/warm a dressing of :

    1 T lemonjuice
    3 T olive oil
    1 clove of garlic, grated
    salt
    lots of pepper

    This salad goes perfectly with fish.

      I used to cook something similar in the summer. Eating on a balcony 100 meters from the Mediterranean Sea in Agde. Loads of grilled seafood with a potato salad: same approach as yours, also same dressing, difference is: very thin slivers of dried tomato, kalamata olives and basil.

      When I have enough time and feel like doing it, I rip the basil leaves in smaller parts by hand, for some reason they release more flavour(?).
