Fried Oysters

Fried Oysters


Make a batter with

1 egg

2 T cornstarch

1 T water

2 t bakingpowder

1 t salt

½ t freshly ground white pepper

2 t sesame oil

Set aside for 20 minutes


Rinse and drain 450 gram of fresh oysters.

I bought mine at the chinese supermarket. A whole bag with a kilo of frozen oysters. Perfect for this purpose.


Fill a bowl with 50g breadcrumbs. (panko)


Drop some oysters in the batter.

Take them out, one by one and toss them with the breadcrumbs.

Put them on a plate.


Heat peanut oil for deepfrying. (I heated it to 190 °C)

Add the oysters and fry for about 3 minutes until goldenbrown.

Let them drip on some papertowls.


Serve with sichuanpeppersalt.

Or chinese red vinegar with some jullienne ginger.


I thought they were very nice. I’m not that much into deepfried stuff, but I was bored this afternoon. And I remembered I had these oysters in the freezer. I think they make a nice snack of appetizer.

And the combination with sichuanpeppersalt is really very nice.
