Gingerbeer & rum cupcake with pineapple flower

These pineapple 'flowers' take quite a bit of time to make but they do look great and they taste amazing!


Relatively easy to do, just peel a pineapple and remove the eyes then slice thinly.

Place the pineapple slices on a tray lined with baking parchment and bake in a low oven (about 100°c) for around 30 minutes.

Turn them over and bake until they are fully dried out (around another 30 minutes depending on how think the slices are) then remove from the oven and leave to cool in a muffin tray to form the flower shape.


Simples! ;)
